Fermentation at a controlled temperature of 14 °C and subsequent èlevage on the fine lees for about 3 months
Remuage and disgorgement à la volée carried out manually.

18/24 months starting from the draft
3 months in the bottle starting from degorgement

Producer recommendations

Ideal with seafood crudités and fried vegetables, it accompanies any meal very well, even fatty foods that are not too salty. To be served at 6-8°C.
