Vinification
Maceration with traditional contact with grape skins for 10-12 days. First extraction with the removal of a part of the must and continuous pumping until the end of the alcoholic fermentation, that occurs at a controlled temperature with selected yeasts.
Maturation
2-3 months stainless steel tanks
14 months in barrels and new French oak casks
10-12 months in bottles
Organoleptic characteristics
Bright, deep ruby red color, with a firm and decisively full bouquet, enhanced by notes of blackberries and plums. The taste is smooth and harmonious, with good alcohol content, lasting persistence, and a pleasant, fruity return.
Producer recommendations
Ideal with first courses of meat dishes, braised and stewed meats, aged cheese and game.
To be served at 16-18° C.
